  1. Pack the onion, garlic, ginger, horseradish, and pepper into a clean jar.

  2. Pour in enough raw apple cider vinegar to cover everything by two inches, and cap it with a non-metal lid.

  3. Let it steep on the counter for 3 to 4 weeks, shaking daily. Then strain it and stir in the honey.
