  1. Simmer the ginger slices in the water for 5 minutes. Don't boil it hard, a gentle simmer keeps the good stuff intact.

  2. Pour into a mug and let it cool for 2 minutes.

  3. Stir in the honey and lemon juice. Never add honey to boiling-hot water, it kills the enzymes.
