  1. Simmer the thyme and ginger in the water on low for 10 minutes, then take it off the heat and steep 5 more.

  2. Strain the liquid into a clean jar, pressing the herbs to get every last drop.

  3. Let it cool until just warm, then stir in the honey and lemon juice. Hot liquid would cook the goodness right out of raw honey.
